I absolutely love food that had the following components: Tasty, easy to make, full of health enhancing ingredients, vegetarian, and is also low GL (has minimal impact on blood sugar balance, i.e pulls you away from diabetes instead of towards it). For those of you that may have a blood sugar imbalance, here are some signs to look out for: Tiredness, especially energy slumps after soon eating, easily stresses/emotional/irritable, craving sweet foods, groggy in the morning, poor concentration, headaches, dizziness.
Below is a recipe that has all of the positive components I like in a meal. Its from a nutritionist called Evi and I got if from Patrick Holfords’ site. If you don’t know who Patrick Holford is and care about your health, I would highly recommend picking up a book or 2 of his. Especially the low GL diet cookbook as it is a fairly easy to implement diet plan he has researched and developed that helps us reverse the effects of quick release, high sugar foods are having on us.
So.. here’s the recipe…Enjoy!!!
Immune Boosting Stir Fry (Serves 2)
2 tablespoons of Coconut oil
300g of king prawns/ or equal amount of tofu if you prefer the veggie option
40g of cooked wholegrain noodles
50g of combination of shitake & reishi mushrooms
2 finely chopped spring onions
50g Broccoli roughly chopped
2 x Pak choi
4 Crushed cloves of garlic
½ whole bird eye chilli
½ a root of grated ginger
20g of chopped coriander
Juice of half a lime
All you need to do is throw everything in a wok, starting with the harder vegetables (3-4 mins), followed by the softer ones (2-3 mins). Serve to the plates and sprinkle with coriander and squeeze the lime. Keep everything nice and crunchy and enjoy this tasty, easy and healthy meal.
Note: For additional protein, you can add an egg and stir it in with the noodles to scramble slightly for 30 seconds.
